Our Organic Sugar is produced form certified organic sugar cane grown on a co-operative of sustainable family farms in Paraguay. The Sugar Mill is energy self sufficient - we use the crushed cane stalks, called bagasse, as fuel for the boilers which generates the electricity for the Mill, so we do not need to use any fossil fuels. We 'green cut' the cane - which means that we do not burn or spray the fields and the sugar cane is cut by hand. The leaves and tops of the cane plant are left in the fields as a nutrient source for the soil and a s a natural form of weed control.
Marie's Chocolate Almond Brownies
Make 24 Brownies
1 1/4 cups whole-wheat pastry flour
1/4 cup yellow corn meal
1 cup unsweetened cocoa powder, sifted
1 teaspoon baking soda
1 teaspoon non-aluminum baking powder
1 teaspoon ground cinnamon
1/2 teaspoon sea salt
1/2 cup sliced almonds
1/2 cup non-dairy chocolate chips 1 (12.3 oz package) lite silken tofu, firm
1/2 cup prune puree
1 1/2 cups WS Organic Sugar
1 tablespoon pure vanilla extract
1/2 cup enriched vanilla soymilk
Preheat oven to 350°F. Spray 9' x 13' baking pan with olive oil cooking spray. Combine pastry flour, cornmeal, cocoa, baking soda, baking powder, cinnamon, and salt, in a large bowl. Stir in almonds and chocolate chips, and set aside. Place tofu in food processor, and blend until smooth. Add prune puree; blend, add sugar, extract, and soymilk. Process until smooth. Make a well in the dry ingredients and quickly fold in tofu mixture. Do not overbeat. Pour batter into prepared pan, bake for 30 minutes or until tester comes out clean.
Ingredients (Fudge Frosting):
1 1/2 cups Wholesome Sweeteners' Organic Powdered Sugar
1/4 cup cocoa powder
4 tablespoons vanilla soymilk
1 teaspoon vanilla extract
1/4 cup sliced almonds
Sift Powdered Sugar and cocoa into a medium bowl. Add milk and vanilla, blend with a small whisk and spread over cooled brownies. Sprinkle with sliced almonds.
