Wholesome Sweeteners' Organic Turbinado Sugar is made by crushing the freshly-cut sugar cane to squeeze out the juice, which is rich in molasses, vitamins and minerals. The cane juice is evaporated and spun in a large turbine to produce the distinctive sparkling golden crystals. For this reason, this style of sugar is often referred to as Turbinado Sugar. It has a distinctive color and natural flavor produced by keeping the sugar cane molasses in and around the crystals.

Wholesome Sweeteners' Organic Sugar is produced from certified organic sugar cane grown without the use of herbicides, synthetic fertilizers or chemicals in South America. The Sugar Mill provides a much needed infrastructure for the rural community, which would otherwise not be available such as medical facilities, housing, schools, clean water and electricity. The Mill is energy self sufficient- we use the crushed cane stalks, called bagasse, as fuel to generate electricity for the Mil and the surrounding community, so we do not use any fossil fuels. The Mill purchases sugar cane from farmer cooperatives that 'green cut' the cane - which means that we do not burn or spray the fields and the sugar cane is cut by hand. The leaves and tops of the cane plant are left in the field as a nutrient source for the soil and as a natural form of weed control.

2 stick butter, preferably organic
1/2 cup WS Organic Turbinado Sugar
2 cups unbleached all purpose flour, sifted Pinch Sea Salt
Method: Preheat the oven to 350°F, Gas 4, 180°C. Lightly grease two baking sheets. Beat together the butter and sugar in a large bowl until combined. Be careful not to over handle the dough. Add the sifted flour and salt and work together to form a stiff dough, then knead lightly for a few moments until smooth. Roll out the dough to a thickness of about 3/8 inch (1 cm) thick. Dust the rolling-pin with flour, if necessary. Using a small cookie-cutter, cut 24 cookies, re-rolling the trimmings, and place on the baking sheets, well spaced to allow for expansion. Sprinkle cookies with extra Turbinado Sugar and bake for 12-15 minutes until pale golden brown. Cool the cookies for a few minutes and transfer the wire racks to cool completely.
Notes from The Sugar Club: For a professional finish, when cold, brush the edges with lightly beaten egg white and dip into the Turbinado sugar. Store in an airtight container to keep crisp.
