Maitake Dried Mushrooms, 0.88 oz (25 g), From Eden Foods

To prepare:

Immerse in lukewarm water for about 10 minutes. Use with soaking water for superb soups or sauces, or add to stir-fries, fried rice or noodles.

Maitake Mushroom & Asparagus Saute

Serves:4

Preparation Time: 20 minutes

1 package Eden Maitake Mushrooms (25 grams)

20 whole asparagus spears (1 bunch)

2 cloves garlic minced

1 Tablespoon Eden Extra Virgin Olive Oil

1 Tablespoon fresh grated ginger root (squeeze out juice and discard pulp)

1 Tablespoon Eden Shoyu Soy Sauce (or to taste)

1/2 cup water

Place Maitake in a bowl and soak for 10 minutes in warm water to cover. Remove, drain and reserve water to use as part of the cooking liquid. Heat oil in skillet, sauté the garlic and Maitake for 2 to 3 minutes. Add the asparagus, shoyu and water. Cover and simmer for 3 to 5 minutes. Remove cover and pour ginger juice over the asparagus. Sauté for another 1 to 2 minutes, stirring occasionally. Serve.
