Peanut Butter and Jelly Muffins
Level of Preparation: Easy Total Prep Time: 35 min
1 cup Arrowhead Mills Kamut Flakes
1 1/2 cups milk or WestSoy Soymilk Drink
1 egg or egg substitute
1/3 cup honey
1/2 tsp vanilla extract
1/2 tsp Hain Sea Salt
1 1/2 cups Arrowhead Mills Pastry Flour
1/4 cup Hain Vegetable Oil
4 tsp baking powder
Arrowhead Mills Creamy or Crunchy Peanut Butter
Fruit Preserves of Choice
Preheat oven to 375ºF. In a medium bowl, soak Kamut Flakes in milk for 10 minutes. Add egg, honey, vanilla, and oil and mix well. In a large bowl, combine dry ingredients. Add liquid ingredients to dry ingredients and gently mix just until moistened. Spoon one heaping tablespoon of batter into lightly oiled muffin cups. Then, place 1 teaspoon each of the peanut butter and fruit preserves on top of the muffin mixture, and cover with additional muffin batter until cups are 3/4 full (approximately one more heaping tablespoon). Bake for 15-20 minutes or until done. Remove muffins from pan and cool before serving.
