Gluten Free All Purpose Baking Mix, 6 Pack, 28 oz (793 g), From Arrowhead Mills

Biscuits

Makes about 6 medium Biscuits

• 1 1/4 cups Arrowhead Mills Gluten Free All Purpose Baking Mix, plus extra for rolling
• 2 tsp non-aluminum baking powder
• 1/4 tsp Hain Sea Salt
• 1/4 cup soy or dairy yogurt
• 1/4 cup Spectrum Canola Oil or equivalent amount of butter
• 1/4 cup WestSoy Rice Drink
• 1 Tbsp honey

Preheat oven to 425Ā°F. Combine mix, baking powder and salt in a bowl. Add oil and cut in with pastry blender. Add yogurt, rice drink, and honey. Stir with fork (mixture will be very moist). Turn dough onto surface dusted generously with Gluten Free all Purpose Baking Mix and roll dough to coat. Shape into ball. Roll to 1/2 inch thickness. Cut with biscuit cutter, then place on a greased cookie sheet and let set about 5 minutes on top of warm stove. Bake about 12 minutes or until edges are slightly brown. Biscuits may be shaped by hand right from the bowl without being rolled out. Gluten-free biscuits do not rise much. The flavor of the biscuits is not affected by lack of rising. It is just a heavier biscuit than a wheat biscuit.
